  1. Prepare 4 Ripe red tomatoes ,medium sized, chopped
  2. Use 5 cloves Crushed garlic
  3. You need 4 cups Water or vegetable stock
  4. Provide 1 tsp Olive oil
  5. You need 1 tsp Black peppers crushed
  6. Provide 1 tsp Paprika
  7. Prepare 1+1/2 tsp dry basil leaves
  8. Provide 1/2 tsp Mixed herbs
  9. Use to taste Salt
  10. Provide 1/2 tsp Sugar
Steps to make Tomato Basil and Garlic Soup:
  1. Heat a soup pot or deep pan. Add olive oil. When it heats, add crushed garlic and saute till it gets crisp.
  2. Then add tomatoes, black pepper, mixed herbs and saute well. Add 1/2 tsp salt and sugar and keep mixing and cooking on medium flame till tomatoes are a bit soft.
  3. Then add 1 cup stock or hot water, cover and cook for 5 to 8 minutes or till tomatoes are very soft and mashed.
  4. Then switch off the flame and add basil, remaining herbs and cool till warm.
  5. Then put the mixture in blender and make a smooth paste. You can strain the soup if desired. Again add rest of stock/ water and keep to boil on low flame. Adjust the flavours as per your liking.
  6. As it reaches one boil, switch off flame and pour in soup bowls. Garnish with fresh herbs and serve piping hot with sandwiches or any other side dish. Enjoy.
