The ingredients needed to prepare Meringue Cookies:
- Use 4 egg whites
- Take 1 pinch salt
- Take 1 tsp vanilla essence
- Provide 1 cup castor sugar
- Get 125 g choc chips
- Use 200 g chopped pecans
Steps to make Meringue Cookies:
- Preheat oven to 140°and line a baking sheet or 2 with baking paper.
- Drop Beat egg whites till frothy, add salt and keep beating till stiff peaks form.
- Add vanilla and sugar and continue beating till sugar melts and mixture becomes smooth and glossy
- Gently fold in choc chips and pecans
- Drop spoonfuls of mixture on tray about 4cm apart
- Bake for 45 mins and then leave to cool in off oven for couple hours
- Store in airtight container
