  1. Use 1 cup Blanched almond meal
  2. Take 1/2 cup grated carrots
  3. Get 1/4 cup unsweetened coconut, shredded
  4. You need 4 tbsp cream cheese
  5. Use 1/3 cup granulated sugar or low carb sweetener
  6. You need Zest of 1 lemon
  7. Use 1 tsp vanilla extract
  8. Prepare 1 tsp cinnamon

  1. Add all the ingredients together in a food processor and mix until combined.
  2. Form balls of 1 tbsp size pressed with your hands. Put in the fridge for about 30 minutes to get them to the firm.
  3. Tip: Firstly, I cut the carrots and grated them before in the food processor, took me 2 mins. Secondly, I soaked the almonds for about two hours and peeled off the skin, dried them and chopped them in the food processor separately coz I didn't have the blanched almond flour.
